To use a vacuum sealer, put the food in a vacuum bag, leave empty space at the top, lay the open end across the sealing strip, close the lid until it locks and press the vacuum and seal button. The machine pulls the air out, heats a strip across the bag to close it, and a light tells you when it has finished. That is the routine for the countertop sealers most people own. Chamber sealers and handheld pumps work differently, and both are covered below.
We visited the GERYON E2900-MS, FoodSaver V4400 and ZWILLING Fresh & Save listings on amazon.com on October 26, 2026, along with Anova’s guide to its chamber sealer. The food safety rules come from Oregon State University Extension and the FDA. Your own sealer’s manual always wins over a general guide.
What kind of vacuum sealer do you have?
| Type | How it removes the air | Bags | Liquids |
|---|---|---|---|
| Countertop (clamp or edge) sealer | Sucks air out through the open end of the bag, then heat-seals it | Textured vacuum bags or rolls | Only frozen or with care |
| Chamber sealer | Removes the air from the whole chamber, bag included | Smooth chamber pouches | Yes |
| Handheld pump | Pulls air through a valve on the bag or container lid | Bags and boxes with a valve, from the same brand | No |
If you are not sure, look at the lid. A countertop sealer has a long, flat heating strip under a hinged lid. A chamber sealer has a deep box you put the whole bag into. A handheld pump is a cordless gadget the size of a pepper mill.
How do you use a countertop vacuum sealer?
- Use bags made for vacuum sealing. The GERYON listing describes them as specially designed, multi-layer bags. One side has a ribbed or dotted texture that leaves channels for the air to escape, which is why a smooth zipper bag will not vacuum on these machines.
- Fill the bag and leave a few inches of empty bag above the food. The sealer needs that margin to grip the bag, and a bag filled to the brim wrinkles at the seal.
- Wipe the inside of the open end if anything greasy or wet touched it. A clean, dry strip of bag is what the heat bar needs.
- Lay the open end flat inside the machine, across the sealing strip and into the vacuum channel, with no folds. On the GERYON you then press the lid down until it clicks.
- Choose the mode. Dry is for solid foods, moist is for meat, fish or anything that might release juice. The GERYON has both, plus a seal-only button for closing bags of chips or coffee without vacuum.
- Press vacuum and seal, and wait for the light to go off. Then open the lid and check the seal: it should be a smooth, clear line all the way across.
Some machines do part of this for you. The FoodSaver V4400 detects the bag when you insert it and starts on its own, and it has roll storage with a built-in cutter. When we visited the listings, the FoodSaver was the only one of the three to mention a cutter. Smaller sealers like the GERYON have neither feature, so you cut bags from a roll with scissors.
How do you make a bag from a roll?
Pull out enough roll to hold the food plus that empty margin at the top, cut it straight across, and seal one end with the seal-only button. You now have a bag with three closed sides. Fill it and vacuum seal the open end as above. Cutting straight matters, because a slanted edge leaves one corner short of the sealing strip.

How do you vacuum seal liquids and wet food?
On a countertop sealer, freeze them first. Pour soup, stock or sauce into a container or an open bag standing upright, freeze it until solid, then seal it. The pump on these machines pulls air out through the end of the bag, and liquid comes with it. Liquid that reaches the sealing strip stops it from closing, and liquid that goes further ends up inside the machine. That is also what the moist mode is for: marinated meat and juicy fish that would otherwise leak into the seal.
For anything wet that you cannot freeze first, watch the bag and press seal as soon as liquid starts moving toward the top. Then reseal a second line just above the first if your machine allows it.
A chamber sealer is the exception. Because the whole chamber is pumped down, the pressure stays even inside and outside the bag and the liquid stays where it is. Anova sells its chamber sealer for exactly this: sealing liquids, marinating a chicken breast in its marinade, and infusing or pickling in open jars, which go into the chamber without a lid. Chill warm liquids first, though. Under vacuum, liquid boils at a lower temperature, and warm soup can bubble up inside the chamber.
How do you use a handheld vacuum pump?
Zip the bag or close the container lid, put the pump on the valve and press the button. ZWILLING’s Fresh & Save pump is rechargeable and works with the brand’s own bags and containers, which have a valve built into them. Keep food away from the valve and the zip, and do not use it for soup or anything runny, since the liquid would be pulled toward the pump.
A pump is the easier option for leftovers and things you open every day, like coffee or cheese. A countertop sealer is the better choice for freezing meat or batch cooking, where you want a lot of bags sealed for a long time.
Why didn’t my vacuum sealer seal?
| What you see | Likely cause | What to do |
|---|---|---|
| The pump runs but the bag never gets tight | Smooth bag, or the open end is not in the vacuum channel | Use textured vacuum bags and reposition the bag with no folds |
| Air gets back in after a few hours | Moisture, crumbs or a wrinkle in the seal, or a hole from a bone | Clean and dry the end, reseal above the old line, wrap sharp bones first |
| Liquid in the seal or in the machine | Wet food on dry mode, or bag too full | Freeze liquids first, use moist mode, leave more empty space |
| Seal is weak or melted after several bags | Heat strip too hot from back-to-back sealing | Let the machine cool between bags |
| Soft food comes out crushed | Full vacuum on bread, berries or leafy greens | Freeze soft food first, or stop the vacuum early and seal |
If juice or crumbs got sucked into the machine, clean the drip area before the next bag. The GERYON’s top lid comes off for that. For other models, check the manual for which parts come out and how to clean them.

Is vacuum sealed food safe at room temperature?
No. Vacuum sealing slows down the things that need air, like freezer burn and many kinds of spoilage, but it does not preserve food on its own. Oregon State University Extension warns that Clostridium botulinum, the bacterium behind botulism, can grow in vacuum sealed foods left at room temperature, and that refrigeration slows its growth. So anything that belongs in the fridge or freezer still goes there after sealing: meat, fish, cooked food, cheese and cut vegetables.
Thaw vacuum sealed food in the fridge, not on the counter. The FDA’s advice for frozen seafood is to thaw it gradually in the refrigerator overnight. Dry goods like rice, coffee beans or crackers are fine in the pantry once sealed, because they were fine there before.
Be careful with storage claims on the box. FoodSaver’s listing says frozen meat can last up to three years in its system, and ZWILLING’s says food stays fresh up to five times longer. Those are the sellers’ own figures for their own systems, and they depend on the food and on how cold your freezer is.
